1 large sweet onion quartered and sliced
1/4 cup balsamic vinegar
2 tomatoes peeled seeded and coarsely chopped
2 yellow tomatoes peeled seeded and coarsely chopped
1 red pepper seeded and chopped
1 green pepper seeded and chopped
1 yellow pepper seeded and chopped
1/2 cup fresh cilantro
1 mango peeled seeded and chopped
Cook onion in heavy nonstick pan over med. Heat, stirring constantly, until tender (add water as necessary to prevent sticking).
Add vinegar, tomatoes, peppers and cook 2-3 minutes.
Remove from heat and add cilantro and mango.
Chill.
Serve over fish (great over blackened Mahi Mahi)
